The journeys we found from Bristol to Winchester all involved a change. The usual way is a GWR train from Bristol Temple Meads to Reading, 70 minutes, then a CrossCountry train for the 34 minutes on to Winchester. With the change, the journey takes just under two hours.
On the weekday timetable we checked, connecting departures left Temple Meads at half past every hour from 06:30 to 19:30, plus a 21:00, the latest we found. The wait at Reading came to about twelve minutes, which is enough to change trains calmly without leaving you hanging about.
Some journeys changed at Bristol Parkway as well as Reading, leaving at scattered times from 06:35 to 20:33. They typically took about 2h 15m, some twenty minutes longer than the main route, so they are worth it only if a half-past train does not suit.
A different pattern skipped Reading and changed at Southampton Central instead. It left at about 22 minutes past most hours from 07:22 to 20:27 and took around 2h 10m, about a quarter of an hour longer than going via Reading. Because it leaves only eight minutes before the half-past train, it adds little choice of time; its use is as a back-up if the Reading connection is disrupted.
A version with two changes, at Romsey and Southampton Airport Parkway, left at the same times and took nearer 2h 25m, so it has no advantage over the single Southampton change.
The car is a little faster: the M4 and A34 route is 87 miles and takes about 1h 40m, against just under two hours by train.
Winchester station is around 760 metres from the Buttercross on the High Street, a ten-minute walk into the centre.
